Uzushio Damascus Steel Japanese Kitchen Knives

Uzushio knives are made by a master knife maker who is based at the Takefu Knife Village. The Takefu Knife Village is a knife making workshop in Japan where independent artisans share the same facilities to independently make knives of their own designs. Uzushio means whirling tide or eddying current in Japanese. This particular line is named after the unique 'Uzushio' look of the damascus pattern that Mr. Azai imparts on his knife blades.
Uzushio knives are made by a 5th generation knife maker who holds the official title of Dentokogeishi, which is a prestigious title bestowed by the Japanese government on master craftsmen. He works alone and each of his knives is made entirely by him, hand-forged in the traditional way, as it has been done for over a thousand years in Japan.
Each Uzushio knife comes in a wooden presentation gift box worthy of a knife of this quality. The Uzushio handles are solid snakewood. We special order our Uzushio knives with the handles a bit thicker than standard. We have found that many Western buyers find the standard handles on Japanese knives to be a bit too thin. The handles on our Uzushio knives should offer greater comfort for people with larger hands, while still feeling fine for people with small hands. These are heirloom quality knives that will one day be treasured family heirlooms.

All Uzushio knives are also available, upon special order, with a polished surface, which gives a very different look to the blade compared to the standard surface. The standard surface has more of a matte appearance and the layers, while smooth to the touch, are visibly very pronounced. The polished knives have a more textured surface, that is brightly polished like a new coin. The layered surface, while more three dimensional on the polished knives, is somewhat less visible and different in appearance. Please note that we stock very few of the Uzushio polished knives, and if we do not have the knife that you require in stock, it will take us from 2 - 5 months to acquire it.
